2 medium flour tortillas (whole wheat or gluten-free also work)
1 large apple (Granny Smith or Honeycrisp), thinly sliced
4 tablespoons cream cheese or almond butter
1 teaspoon ground cinnamon
1 tablespoon honey or maple syrup
1 tablespoon unsalted butter
A pinch of salt (optional)
Instructions
In a small bowl, toss your thinly sliced apples with the cinnamon and honey. Make sure each slice is evenly coated. If you like a little extra warmth, feel free to add a pinch of nutmeg or ginger as well.
Lay your tortillas flat on a clean surface. Spread 2 tablespoons of cream cheese or almond butter evenly across the entire surface of each tortilla. This acts as the “glue” that holds everything together.
Arrange the seasoned apple slices over one half of each tortilla. Fold the empty half over the apples to create a half-moon shape. Press down gently to ensure the tortilla sticks to the filling.
Melt the butter in a large non-stick skillet over medium heat. Place the folded tortillas in the pan. Cook for 3 to 4 minutes per side, or until the tortilla is golden brown and crispy, and the filling is warm and gooey.
Remove the quesadillas from the pan and let them rest for one minute. This allows the filling to set slightly. Use a pizza cutter or sharp knife to slice each half-moon into three wedges.
