  • 2 cups rolled oats (old-fashioned oats)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups milk of choice (dairy, almond, or oat milk)
  • 1 large egg
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted coconut oil or butter
  • 1 cup fresh blueberries
  • 1 cup diced peaches (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish with cooking spray or a little bit of coconut oil to ensure the oats don’t stick.
  2. In a large mixing bowl, combine the rolled oats, baking powder, salt, and cinnamon. Stir them together until the spices are evenly distributed throughout the oats.
  3. In a separate medium bowl, whisk together the milk, egg, maple syrup, vanilla extract, and melted coconut oil. Whisk until the egg is fully incorporated and the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in half of the blueberries and half of the diced peaches. Pour the mixture into your prepared baking dish.
  5. Scatter the remaining blueberries and peaches over the top of the oat mixture. Place the dish in the oven and bake for 30 to 35 minutes, or until the top is golden brown and the center is set. Remove from the oven and let it cool for 5 minutes before serving.
