1 cup whole milk (or half-and-half for extra richness)
1/4 cup packed light brown sugar
2 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2–3 tablespoons unsalted butter for the skillet
Instructions
In a large, shallow bowl or pie dish, whisk together the eggs, milk, brown sugar, maple syrup, vanilla extract, cinnamon, and salt. Whisk vigorously until the brown sugar has mostly dissolved and the mixture is smooth and well-combined.
Place a large non-stick skillet or griddle over medium-low heat. Add a tablespoon of butter and let it melt until it begins to bubble slightly. Making sure the heat isn’t too high is key to preventing the sugar in the custard from burning before the center is cooked.
Place two slices of bread into the egg mixture. Let them soak for about 20 to 30 seconds per side, depending on the thickness and staleness of the bread. You want the bread to be saturated but not falling apart.
Place the soaked slices into the hot skillet. Cook for 3 to 4 minutes per side, or until the surface is deeply golden brown and caramelized. Repeat the process with the remaining slices, adding more butter to the pan as needed.
Once both sides are cooked and the center of the bread feels firm to the touch, remove the slices from the pan and serve immediately while they are hot and fragrant.
