  • 3 large overripe bananas, mashed
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick cooking spray. For easy removal, you can also line the pan with a strip of parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, peel the overripe bananas and mash them with a fork or potato masher until they reach a smooth consistency with only a few small chunks remaining.
  3. Add the melted butter to the mashed bananas and stir until combined. Whisk in the brown sugar, egg, and vanilla extract until the mixture is smooth and well-incorporated.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, and black pepper. This ensures the spices are evenly distributed throughout the bread.
  5. Gently fold the dry ingredients into the wet banana mixture using a spatula. Mix just until no streaks of flour remain. Be careful not to overmix, as this can make the bread tough and dense.
  6. Pour the batter into your prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top starts browning too quickly, loosely cover it with foil after 40 minutes.
  7. Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing. This allows the crumb structure to set properly.
