Cinnamon Apple Baked Oatmeal

  • 2 cups old fashioned rolled oats
  • 2 large apples, diced (such as Granny Smith or Honeycrisp)
  • 2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 3 tablespoons butter or coconut oil, melted
  • 1 teaspoon baking powder
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch or 9×9 inch baking dish with butter or cooking spray to prevent the oats from sticking.
  2. In a medium-sized mixing bowl, whisk together the milk, eggs, maple syrup or honey, melted butter (or coconut oil), and vanilla extract until the mixture is smooth and well combined.
  3. In a separate large bowl, stir together the rolled oats, baking powder, ground cinnamon, and salt. Make sure the cinnamon is evenly distributed throughout the oats.
  4. Pour the wet ingredient mixture into the bowl with the dry oats. Stir well to combine. Gently fold in about three-quarters of the diced apples, saving the rest to sprinkle on top.
  5. Pour the oatmeal mixture into your prepared baking dish. Spread it out evenly and sprinkle the remaining apple pieces over the top. Place the dish in the oven and bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
  6. Remove the dish from the oven and let it cool for at least 5 to 10 minutes before slicing. This allows the oatmeal to set properly so it doesn’t crumble when served.
