  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 2 medium apples, peeled and chopped into small chunks (Granny Smith or Honeycrisp)
  • Extra cinnamon and sugar for topping

Instructions

  1. Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray. For easy removal, you can line the pan with parchment paper, leaving an overhang on the sides.
  2. Mix the Cinnamon Sugar Swirl: In a small bowl, combine the 1/3 cup of light brown sugar and 1 teaspoon of ground cinnamon. Stir them together until well mixed and set this aside for layering later.
  3. Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes using an electric mixer.
  4. Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated into the creamy base.
  5. Combine Dry and Wet Ingredients: Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir until just combined; do not overmix the batter.
  6. Fold in Apples and Layer: Gently fold the chopped apples into the batter. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Top with the remaining batter and the rest of the cinnamon sugar.
  7. Swirl and Bake: Use a knife or a skewer to gently swirl the cinnamon sugar into the batter using a figure-eight motion. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
