  • 1 1/2 cups fresh or frozen cranberries

Instructions

  1. Step 1: Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it thoroughly with cooking spray. Preparing the tin first ensures your batter doesn’t sit too long once mixed.
  2. Step 2: Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Make sure there are no large clumps of flour to ensure an even rise.
  3. Step 3: Combine Wet Ingredients: In a medium bowl, whisk the egg. Add the milk, orange juice, oil (or melted butter), orange zest, and vanilla extract. Whisk until the mixture is well combined and the egg is fully incorporated.
  4. Step 4: Form the Batter: Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold the mixture together until just combined. Be careful not to overmix; a few small lumps of flour are perfectly fine.
  5. Step 5: Fold in Cranberries: Gently fold the cranberries into the batter. If using frozen cranberries, do not thaw them first, as this can cause the juice to bleed and turn the batter pink. Distribute them evenly throughout the mixture.
