  • 1 cup cottage cheese (full fat preferred)
  • 1 ½ cups shredded Gruyère or Swiss cheese
  • ½ cup garlic scapes, finely chopped
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon hot sauce (optional)
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 300°F (150°C). Place a large baking pan or roasting tray on the middle rack and fill it with about an inch of hot water. This creates the steam needed for the soft texture. Generously spray a silicone muffin mold with non-stick cooking spray.
  2. Add the eggs, cottage cheese, salt, pepper, and optional hot sauce into a high-speed blender. Blend on high for about 30 to 60 seconds until the mixture is completely smooth and slightly frothy. This aeration is key to the light texture.
  3. In a small bowl, mix your finely chopped garlic scapes with the shredded Gruyère cheese. Distribute this mixture evenly among the cups of your silicone muffin mold. This ensures that every bite has plenty of cheese and garlic flavor.
  4. Carefully pour the blended egg mixture over the cheese and scapes in each mold, filling them about three-quarters of the way to the top. Place the silicone mold into the water bath in the oven. Bake for 20 to 25 minutes, or until the centers are set but still slightly jiggly.
  5. Remove the pan from the oven and let the egg bites sit in the mold for at least 5 minutes. Use a spoon or spatula to gently pop them out. Allowing them to cool slightly helps them firm up so they don’t break when you remove them.
