2 medium apples (Granny Smith or Honeycrisp), peeled and diced
1/3 cup light brown sugar
1 teaspoon ground cinnamon
1/2 cup powdered sugar (for glaze)
2 tablespoons pure maple syrup (for glaze)
1 tablespoon milk or heavy cream (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan generously with butter or non-stick cooking spray. You can also line it with parchment paper for easier removal later.
In a medium bowl, combine the diced apples, brown sugar, and cinnamon. Stir well until the apples are evenly coated in the cinnamon-sugar mixture. Set this aside to let the flavors meld while you prepare the batter.
In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the flour mixture. Mix until just combined; do not overmix, as this can make the bread tough.
Pour half of the batter into the prepared loaf pan. Spread half of the apple mixture over the batter. Pour the remaining batter on top, followed by the rest of the apple mixture. Use a butter knife to gently swirl the apples into the batter using a figure-eight motion.
Place the pan in the center of the oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean. If the top is browning too quickly, loosely cover it with foil for the last 15 minutes.
While the bread cools slightly in the pan, whisk together the powdered sugar, maple syrup, and milk until smooth. Drizzle the maple glaze over the warm bread. Allow the bread to cool for at least 15-20 minutes before slicing.
