Step 1: Oven and Tin Preparation Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin thoroughly with butter or cooking spray, or line it with paper liners to ensure the muffins do not stick.
Step 2: Combine Dry Ingredients In a large mixing bowl, whisk together the 2 cups of flour, granulated sugar, baking powder, and salt until the mixture is uniform and free of lumps.
Step 3: Whisk Wet Ingredients In a separate medium-sized bowl, beat the egg lightly. Stir in the milk, vegetable oil, and vanilla extract until the liquids are fully combined.
Step 4: Mix the Batter Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon just until the flour disappears. Be careful not to overmix, as this leads to tough muffins.
Step 5: Fold in the Fruit Gently fold the diced peaches into the batter. Ensure they are evenly distributed without crushing the fruit pieces too much.
Step 6: Prepare the Streusel Topping In a small bowl, mix the brown sugar, 1/3 cup flour, and cinnamon. Using a fork or a pastry blender, cut in the cold, cubed butter until the mixture looks like coarse, sandy crumbs.
