1 lb ground breakfast sausage (pork, turkey, or chicken)
2 large sweet potatoes, peeled and cut into 1/2-inch cubes
1 medium onion, diced
1 red bell pepper, seeded and diced
2 cloves garlic, minced
2 tablespoons olive oil (if needed)
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley, chopped for garnish

Step 1: Brown the Sausage: Place a large skillet over medium-high heat. Add the ground sausage and cook, breaking it apart with a wooden spoon or spatula, until it is fully browned and no longer pink. Use a slotted spoon to remove the sausage from the skillet and set it aside on a plate, leaving the rendered fat in the pan.
Step 2: Sauté the Sweet Potatoes: If there isn’t enough fat left in the pan, add 1-2 tablespoons of olive oil. Add the cubed sweet potatoes to the skillet in a single layer. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are tender and starting to brown on the edges. Covering the pan for the first 5 minutes can help speed up the softening process.
Step 3: Add Aromatics and Peppers: Add the diced onion and red bell pepper to the skillet with the potatoes. Continue to cook for another 5-7 minutes until the onions are translucent and the peppers are soft. Stir in the minced garlic, smoked paprika, thyme, salt, and pepper. Cook for 1 minute more until the garlic is fragrant.
Step 4: Combine and Finish: Return the cooked sausage to the skillet. Stir everything together well to ensure the flavors are evenly distributed. Cook for another 2-3 minutes to make sure everything is heated through and the potatoes have a nice crisp exterior. Taste and adjust seasoning if necessary.
Step 5: Garnish and Serve: Remove the skillet from the heat. Sprinkle the fresh chopped parsley over the top and add a pinch of red pepper flakes if you like a little kick. Serve immediately while hot.
