Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 cup apple cider (reduced preferred for extra flavor)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups apples, peeled and finely chopped (such as Honeycrisp or Granny Smith)
  • Optional: 2 tablespoons cinnamon sugar for topping

Instructions

  1. Step 1: Preheat and Prep. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or a round cake pan to ensure the cake releases easily after baking.
  2. Step 2: Cream Butter and Sugars. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This usually takes about 3 to 5 minutes with an electric mixer.
  3. Step 3: Add Eggs and Liquid Ingredients. Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the apple cider and vanilla extract. The mixture might look slightly curdled at this stage, but it will come together once the dry ingredients are added.
  4. Step 4: Whisk Dry Ingredients. In a separate medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt until well combined.
  5. Step 5: Combine Wet and Dry Ingredients. Gradually add the dry ingredients to the wet ingredients. Mix on low speed just until combined. Be careful not to overmix, as this can make the cake tough.
  6. Step 6: Fold in Fresh Apples. Gently fold the finely chopped apples into the batter using a spatula. This ensures the fruit is evenly distributed throughout the cake.
  7. Step 7: Bake the Cake. Pour the batter into the prepared pan and smooth the top. If desired, sprinkle the top with cinnamon sugar. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Step 8: Cool and Serve. Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely, or serve it warm for a cozy treat.
