1 refrigerated pie crust (or homemade pastry dough)
4–5 large ripe peaches, sliced into 1/2-inch wedges
1/2 cup packed light brown sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
1 egg (for egg wash)
1 tablespoon water
1 tablespoon turbinado sugar (optional, for crunch)
Instructions
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper to prevent sticking and make cleanup easy. If you are using a store-bought crust, let it sit at room temperature for about 10 minutes so it is easier to roll out.
In a large mixing bowl, combine the sliced peaches, brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and vanilla extract. Gently toss everything together with a spatula until the peaches are evenly coated. Let them sit for about 5 minutes to allow the juices to start flowing.
Place your pie crust on the prepared baking sheet. If needed, use a rolling pin to lightly flatten it into a 12-inch circle. It does not have to be a perfect circle; a rustic shape is part of the charm.
Arrange the peach slices in the center of the dough, leaving a 2-inch border all the way around. You can pile them in a decorative spiral or simply mound them in the center for a truly rustic look. If there is excess juice in the bowl, drizzle a little bit over the peaches, but discard the rest to avoid a soggy crust.
Gently fold the edges of the dough over the peaches, overlapping the crust as you go. Press down lightly on the pleats to secure them. The center of the galette will remain open, showing off the fruit.
In a small bowl, whisk the egg and water together. Brush the crust lightly with the egg wash and sprinkle with turbinado sugar if desired. Bake for 30 to 35 minutes, or until the crust is a deep golden brown and the peach filling is bubbling. Let it cool for at least 15 minutes before slicing.
