  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup light brown sugar, packed
  • 1/4 cup pure maple syrup
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups Granny Smith apples, peeled and finely diced
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Grease an 8×8 inch square baking pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal later.
  2. In a large mixing bowl, whisk together the melted butter and light brown sugar until the mixture is smooth. Stir in the maple syrup, egg, and vanilla extract. Whisk vigorously until the batter looks glossy and well-combined.
  3. In a separate medium bowl, sift together the all-purpose flour, ground cinnamon, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring with a spatula or wooden spoon just until no streaks of flour remain. Be careful not to overmix, as this can make the blondies tough.
  4. Gently fold the diced apples and the chopped nuts (if using) into the batter. The batter will be quite thick, which is normal for a blondie recipe. Ensure the apples are evenly distributed throughout the mixture.
  5. Spread the batter evenly into the prepared baking pan, smoothing the top with your spatula. Place the pan in the center of the oven and bake for 25 to 30 minutes. The edges should be golden brown, and a toothpick inserted into the center should come out with just a few moist crumbs.
  6. Remove the pan from the oven and set it on a wire rack to cool completely. Allowing the blondies to cool in the pan is essential for the texture to set properly. Once cool, lift the bars out using the parchment paper and cut into 12 squares.
