Step 1: Prepare the Apples – Peel, core, and dice your apples into small, uniform pieces (about 1/4 inch). This ensures they cook through during the short frying time. Toss them with a squeeze of lemon juice if you aren’t ready to mix the batter immediately to prevent browning.
Step 2: Mix Dry Ingredients – In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Ensuring the spices are well-distributed will give you a consistent flavor in every bite.
Step 3: Combine Wet Ingredients – In a separate medium bowl, beat the eggs lightly. Whisk in the milk, vanilla extract, and melted butter until well combined. The melted butter adds a rich flavor and helps create a tender crumb.
Step 4: Create the Batter – Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined. Fold in the diced apples. Be careful not to overmix, as this can make the fritters tough instead of fluffy.
Step 5: Heat the Oil – Fill a heavy-bottomed pot or Dutch oven with about 2 inches of vegetable oil. Heat the oil to 350°F (175°C). Using a kitchen thermometer is highly recommended to ensure the oil isn’t too hot (which burns the outside) or too cool (which makes them greasy).
Step 6: Fry the Fritters – Drop about 1/4 cup of batter per fritter into the hot oil, flattening them slightly with the back of a spoon. Fry 3 or 4 at a time to avoid crowding. Cook for 2-3 minutes per side until they reach a deep golden brown. Remove with a slotted spoon and drain on a wire rack over paper towels.
Step 7: Glaze and Serve – While the fritters are still warm, whisk together the powdered sugar, maple syrup, milk, and vanilla until smooth. Dip the warm fritters into the glaze or drizzle it generously over the top. Let them sit for a few minutes to allow the glaze to set before serving.
