  • 1.5 cups graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 3 large Granny Smith or Honeycrisp apples, peeled and finely diced
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Whipped cream or vanilla yogurt for topping
  • Optional: Caramel sauce for drizzling

Instructions

  1. In a medium mixing bowl, combine the graham cracker crumbs and the melted butter. Stir until the mixture looks like wet sand. Evenly distribute the mixture into 6 small glasses or dessert cups. Use the back of a spoon to gently press the crumbs into the bottom to form a firm base.
  2. Place a medium saucepan over medium heat. Add the diced apples, brown sugar, cinnamon, and nutmeg. Stir frequently for about 5 to 7 minutes, or until the apples have softened slightly but still retain a bit of their shape.
  3. In a small bowl, whisk together the cornstarch and water to create a slurry. Pour this mixture into the saucepan with the apples. Add the vanilla extract. Continue to cook for another 1 to 2 minutes until the liquid thickens into a glossy, clear sauce that coats the apples.
  4. Remove the apple mixture from the heat and let it cool for about 5 minutes. Spoon the warm apple filling over the graham cracker crusts in each cup. Smooth the tops with a spoon.
  5. For the best texture, place the cups in the refrigerator for at least 30 minutes to allow the filling to set. Just before serving, top each cup with a generous dollop of whipped cream and an optional drizzle of caramel sauce.
