Ingredients

Scale
  • 1 cup unsalted butter, cold and cubed
  • 1 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 5 cups fresh peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • 1/2 cup light brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon

Instructions

  1. Step 1: Oven and Pan Preparation: Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking pan with butter or line it with parchment paper, leaving an overhang on the sides for easy removal later.
  2. Step 2: Prepare the Dough: In a large bowl, whisk together the flour, granulated sugar, rolled oats, baking powder, and salt. Use a pastry cutter or your fingers to blend in the cold, cubed butter until the mixture resembles coarse crumbs. Beat the egg and vanilla together in a small bowl, then stir into the flour mixture until the dough is moist and starts to clump together.
  3. Step 3: Form the Crust: Press about two-thirds of the dough mixture into the bottom of your prepared baking pan. Use the back of a measuring cup or your palm to press it down into an even, firm layer. Set the remaining dough aside for the topping.
  4. Step 4: Prepare the Peach Filling: In another bowl, gently toss the sliced peaches with lemon juice, brown sugar, cornstarch, and cinnamon. Ensure the peaches are evenly coated. The cornstarch will help thicken the juices as the bars bake, ensuring they aren’t too messy.
  5. Step 5: Assemble the Bars: Spread the peach mixture evenly over the bottom crust. Take the remaining dough and crumble it over the top of the peaches, leaving some small and large clumps for a rustic, textured look.
  6. Step 6: Bake to Perfection: Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and the peach filling is bubbling around the edges. Remove from the oven and let the bars cool completely in the pan on a wire rack before cutting. This ensures the filling sets properly.
