1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves
1 cup sharp cheddar cheese, shredded
Instructions
Step 1: Season and Sear the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken to the pan and cook for 5 to 7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
Step 2: Sauté the Onions and Apples: In the same skillet, add the sliced onions and apples. Cook for about 5 minutes, stirring occasionally, until the onions are translucent and the apples have softened slightly but still hold their shape.
Step 3: Create the Pan Sauce: Pour in the apple cider, chicken broth, and Dijon mustard. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Bring the mixture to a simmer and let it reduce for 3 to 4 minutes until the sauce thickens slightly.
Step 4: Combine and Melt the Cheese: Place the chicken back into the skillet, nesting it among the apples and onions. Sprinkle the shredded sharp cheddar cheese evenly over the top of the chicken and fruit. Cover the skillet with a lid for 1 to 2 minutes until the cheese is completely melted and bubbly.
Step 5: Garnish and Serve: Remove the lid and sprinkle fresh thyme leaves over the entire dish. Serve immediately while the cheese is hot and the sauce is velvety.
