Ingredients

Scale
  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 2 large heads of broccoli, cut into bite-sized florets
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon toasted sesame oil
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Step 1: Slice and Prepare the Beef. Thinly slice the beef against the grain into 2-inch long strips. Slicing against the grain ensures the meat stays tender and easy to chew after searing. Set the beef aside in a small bowl.
  2. Step 2: Whisk the Stir-Fry Sauce. In a medium bowl, combine the beef broth, soy sauce, oyster sauce, brown sugar, cornstarch, and sesame oil. Whisk the mixture thoroughly until the cornstarch is completely dissolved and the sugar has integrated. This sauce will thicken beautifully as it heats up.
  3. Step 3: Blanch or Steam the Broccoli. Place the broccoli florets in a microwave-safe bowl with a splash of water and cover. Microwave for 2 minutes, or steam them in a pan for 3 minutes until they are bright green and slightly tender. Drain any excess water and set aside.
  4. Step 4: Sear the Steak. Heat one tablespoon of vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and sear for 1-2 minutes per side until browned. Do not overcrowd the pan; cook in batches if necessary. Remove the beef from the pan and set it aside.
  5. Step 5: Sauté Aromatics and Combine. Add the remaining tablespoon of oil to the same pan. Add the minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant. Pour in the sauce mixture and bring it to a simmer. Once the sauce begins to thicken, add the cooked beef and broccoli back into the pan.
  6. Step 6: Final Toss and Garnish. Toss everything together for 1-2 minutes until the beef and broccoli are well-coated and heated through. Remove from heat and garnish with sesame seeds and green onions if desired.
