  • 12 oz chicken apple sausage, sliced into rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 large crisp apple (like Honeycrisp or Granny Smith), cored and chopped
  • 1 small red onion, sliced
  • 2 cups fresh kale or baby spinach
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Step 1: Prepare the Ingredients
    Start by washing and chopping all your vegetables and fruit. Ensure the sweet potatoes are cut into small, uniform cubes so they cook through quickly and evenly. Slice the chicken apple sausage into rounds about half an inch thick.
  2. Step 2: Brown the Sausage
    Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 3 to 4 minutes per side until they are nicely browned and slightly crispy. Remove the sausage from the pan and set it aside on a plate.
  3. Step 3: Sauté the Sweet Potatoes
    Add the remaining tablespoon of olive oil to the same skillet. Toss in the diced sweet potatoes and season with salt, pepper, thyme, and garlic powder. Cover the skillet with a lid and cook for about 8 to 10 minutes, stirring occasionally, until the potatoes are fork-tender.
  4. Step 4: Add Aromatics and Apples
    Remove the lid and add the sliced red onion and chopped apples to the skillet. Sauté for another 5 minutes. You want the onions to become translucent and the apples to soften slightly while still keeping a bit of their bite.
  5. Step 5: Combine and Wilt Greens
    Add the browned sausage back into the skillet along with the kale or spinach. Stir everything together for 1 to 2 minutes until the greens are wilted and the entire dish is heated through. Taste and add more seasoning if necessary.
