  • 1.5 lbs boneless skinless chicken breasts, pounded to 1/2-inch thickness
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 8 oz cremini or baby bella mushrooms, sliced
  • 3 cloves garlic, minced
  • 3/4 cup dry Marsala wine
  • 3/4 cup chicken stock
  • 1/2 cup heavy cream (optional for a creamier sauce)
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. In a shallow bowl, whisk together the flour, salt, and black pepper. Pat the chicken breasts dry with paper towels and dredge each piece in the flour mixture, shaking off any excess. This light coating helps the chicken brown beautifully and helps thicken the sauce later.
  2. Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat. Once the butter is foaming, place the chicken cutlets in the pan. Cook for about 3-5 minutes per side until they are golden brown and cooked through. Remove the chicken from the pan and set it aside on a clean plate.
  3. In the same skillet, add the remaining 2 tablespoons of butter. Add the sliced mushrooms and cook without stirring for a minute to get a good sear. Continue cooking until the mushrooms have released their moisture and turned a deep golden brown. Stir in the minced garlic and cook for another 30 to 60 seconds until fragrant.
  4. Pour the Marsala wine into the skillet, using a wooden spoon to scrape up all the browned bits from the bottom of the pan. Let the wine simmer and reduce by about half. Pour in the chicken stock and heavy cream (if using). Continue to simmer for about 5 minutes until the sauce begins to thicken slightly.
  5. Slide the cooked chicken cutlets back into the skillet. Spoon the mushroom sauce over the meat and let everything simmer together for 2-3 minutes. This allows the chicken to heat through and absorb the flavors. Garnish with fresh parsley and serve immediately.
