  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 12 oz pasta (penne, rigatoni, or fusilli work best)
  • 2 tablespoons olive oil
  • 1 small shallot, minced
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream (or full-fat coconut milk)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon fresh sage, chopped
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste
  • Reserved pasta water (about 1/2 cup)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper on a large baking sheet. Spread the pieces out in a single layer. Roast for 25 to 30 minutes, or until the squash is tender and slightly browned at the edges.
  2. While the squash is roasting, bring a large pot of salted water to a boil. Cook the pasta according to the package directions until it is al dente. Before draining, carefully scoop out about half a cup of the starchy pasta water and set it aside. Drain the pasta and return it to the pot.
  3. In a small skillet over medium heat, add a splash of olive oil. Sauté the minced shallots and garlic until they are soft and fragrant, which should take about 3 to 4 minutes. Be careful not to burn the garlic.
  4. Place the roasted squash, sautéed shallots and garlic, vegetable broth, heavy cream, nutmeg, and fresh sage into a blender. Blend until the mixture is completely smooth and creamy. If the sauce is too thick, add a little more broth or a splash of the reserved pasta water.
  5. Pour the blended squash sauce over the cooked pasta in the large pot. Stir in the Parmesan cheese and turn the heat to low. Toss everything together until the pasta is well-coated and the cheese has melted. If you want a thinner consistency, add the remaining pasta water a tablespoon at a time.
  6. Taste the pasta and add more salt, pepper, or a pinch more nutmeg if needed. Serve warm with extra Parmesan or a sprinkle of fresh herbs on top.
