  • 1 lb large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 6 cloves garlic, minced
  • 1/2 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Step 1: Boil the Pasta
    Bring a large pot of salted water to a boil. Add the linguine and cook according to the package directions until al dente. Reserve about half a cup of pasta water before draining the noodles. Set the pasta aside.
  2. Step 2: Sauté the Shrimp
    In a large skillet, melt 2 tablespoons of butter with the olive oil over medium-high heat. Season the shrimp with salt and pepper, then add them to the skillet in a single layer. Cook for about 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set them on a plate.
  3. Step 3: Create the Garlic Sauce
    In the same skillet, add the remaining 2 tablespoons of butter. Stir in the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant but not browned. Pour in the white wine and lemon juice. Let the mixture simmer and reduce by half, which should take about 3 to 4 minutes.
  4. Step 4: Combine Everything
    Return the cooked shrimp to the skillet and add the cooked pasta. Toss everything together so the sauce coats the noodles evenly. If the pasta seems too dry, add a splash of the reserved pasta water to loosen the sauce.
  5. Step 5: Final Garnish
    Turn off the heat. Sprinkle the fresh chopped parsley and grated Parmesan cheese over the top. Give it one final toss and serve immediately while hot.
