  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon olive oil

Instructions

  1. Start by patting the chicken breasts dry with a paper towel. This helps achieve a better sear. Season both sides of the chicken generously with salt, black pepper, and onion powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the pan is hot, add the chicken breasts. Cook for about 5 to 7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the pan and set it aside on a plate.
  3. Lower the heat to medium. In the same skillet, add the butter. As it begins to melt and foam, add the minced garlic, rosemary, and thyme. Sauté for about 1 minute until the garlic is fragrant and the herbs have infused the butter, being careful not to burn the garlic.
  4. Return the chicken breasts to the skillet. Use a spoon to pour the garlic herb butter repeatedly over the chicken for 1 to 2 minutes. This basting process adds a deep layer of flavor and ensures the meat stays juicy.
  5. Turn off the heat and sprinkle the fresh parsley over the top. Serve immediately while the butter is warm and drizzled over the chicken.
