  • 1 pound fresh carrots, peeled and sliced into 1/2-inch rounds
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar (packed)
  • 1/2 cup water or vegetable broth
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Start by peeling your carrots and slicing them into uniform rounds. Keeping them the same size ensures they all cook at the same rate. If you prefer, you can also cut them into diagonal coins for a more decorative look.
  2. Place the sliced carrots in a large skillet and add the water (or broth) and salt. Bring the liquid to a simmer over medium-high heat. Cover the skillet with a lid and let the carrots cook for about 7 to 8 minutes, or until they are fork-tender but still hold their shape.
  3. Once the carrots are tender, remove the lid. If there is a lot of excess water left, drain most of it out, leaving just a tablespoon or two. Add the butter and brown sugar to the skillet with the carrots.
  4. Stir the carrots constantly over medium heat as the butter and sugar melt together. Continue cooking for another 3 to 5 minutes. The liquid will reduce and thicken into a shiny, syrupy glaze that coats each piece of carrot beautifully.
  5. Remove the skillet from the heat. Sprinkle with fresh black pepper and toss in the chopped parsley for a pop of color and freshness. Serve immediately while hot.
