1.5 lbs chicken thighs (skin-on, bone-in or boneless)
1/4 cup honey
1/4 cup Dijon mustard
1 tablespoon whole grain mustard
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano or thyme
Instructions
Step 1: Preheat and Prep – Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease a baking dish with non-stick spray. Use paper towels to pat the chicken thighs completely dry; this ensures the skin gets crispy and the sauce sticks better.
Step 2: Create the Glaze – In a small mixing bowl, whisk together the honey, Dijon mustard, whole grain mustard, minced garlic, olive oil, salt, pepper, and dried herbs. Mix until the sauce is smooth and well-combined.
Step 3: Coat the Chicken – Place the chicken thighs in the prepared baking dish. Use a pastry brush or a spoon to generously coat each piece of chicken with the honey mustard mixture. Make sure to get the sauce into all the nooks and crannies. If using skin-on chicken, try to get some sauce under the skin as well.
Step 4: Bake to Perfection – Place the chicken in the oven and bake for 25 to 30 minutes. If using bone-in thighs, you may need an extra 5 to 10 minutes. The chicken is done when the internal temperature reaches 165°F (74°C) and the glaze is bubbly and golden brown.
Step 5: Rest and Serve – Remove the dish from the oven and let the chicken rest for 5 minutes before serving. This allows the juices to redistribute, ensuring every bite is moist. Drizzle any extra pan juices over the chicken before bringing it to the table.
