  • 2 large boneless, skinless chicken breasts (sliced into cutlets)
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried oregano
  • Fresh parsley, chopped for garnish
  • Lemon slices for garnish

Instructions

  1. Start by slicing your chicken breasts into thin cutlets. If they are too thick, use a meat mallet to pound them to an even thickness. This ensures the chicken cooks quickly and remains tender.
  2. In a shallow bowl, mix the flour, salt, pepper, and dried oregano. Lightly coat each chicken cutlet in the flour mixture, shaking off any excess. This light coating helps the chicken brown and thickens the sauce later.
  3. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Place the chicken in the pan and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.
  4. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Pour in the chicken broth and lemon juice. Use a wooden spoon to scrape the bottom of the pan to release the flavorful browned bits. Let the liquid simmer for 3-4 minutes until it reduces slightly.
  5. Stir in the remaining tablespoon of butter and the lemon zest until the sauce is smooth and glossy. Return the chicken cutlets to the pan, spooning the sauce over them. Simmer for another minute to heat everything through. Garnish with fresh parsley and lemon slices before serving.
