  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried oregano
  • Fresh parsley, chopped for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides of the chicken generously with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts to the pan and cook for 5 to 7 minutes per side, or until they are golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the pan and set it aside on a plate.
  3. Reduce the heat to medium. In the same skillet, add the butter. Once melted, add the minced garlic and cook for about 1 minute until it becomes fragrant, being careful not to let it burn.
  4. Pour in the chicken broth, lemon juice, lemon zest, and dried oregano. Use a wooden spoon to scrape the bottom of the pan to release any browned bits. Let the sauce simmer for 3 to 5 minutes until it reduces slightly and thickens.
  5. Place the chicken breasts back into the skillet. Spoon the sauce over the chicken and let it warm through for another minute. Garnish with fresh parsley and extra lemon slices if desired.
