  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch chunks
  • 2 large eggs, beaten
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • Vegetable oil for frying
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, sliced for garnish

Instructions

  1. In a medium bowl, whisk the eggs. In a separate shallow dish, combine the cornstarch and flour with a pinch of salt and pepper. Dip the chicken pieces into the egg wash, then dredge them thoroughly in the flour mixture until evenly coated.
  2. Heat about 2 inches of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the chicken in batches. Fry for 3-5 minutes per side until the chicken is golden brown and cooked through. Remove and drain on a paper towel-lined plate.
  3. In a small saucepan over medium heat, combine the honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring the mixture to a gentle simmer, whisking occasionally, until the sauce thickens slightly and becomes glossy.
  4. Place the fried chicken pieces into a large clean bowl or back into the wok (after draining the oil). Pour the warm sesame sauce over the chicken and toss gently until every piece is completely coated in the sticky glaze.
  5. Immediately sprinkle the toasted sesame seeds over the chicken and toss one last time. Transfer to a serving platter and finish with a handful of sliced green onions for a fresh pop of color and flavor.
