  • 1 lb smoked sausage (kielbasa, andouille, or turkey sausage), sliced into rounds
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 large red bell pepper, seeded and chopped into chunks
  • 1 small red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for even easier cleanup and to prevent sticking.
  2. Peel the sweet potatoes and cut them into uniform 1-inch cubes so they cook evenly. Slice the sausage into half-inch rounds. Chop the bell peppers and onions into bite-sized pieces.
  3. Place the sausage, sweet potatoes, peppers, and onions directly onto the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic powder, dried thyme, smoked paprika, salt, and pepper. Toss everything together with your hands or tongs until well-coated, then spread into a single layer.
  4. Place the pan in the oven and roast for 25 to 30 minutes. Halfway through the cooking time, use a spatula to toss the ingredients. This ensures the sweet potatoes get golden brown on all sides and the sausage gets those delicious crispy edges.
  5. Check the sweet potatoes with a fork; they should be tender. Remove the pan from the oven and sprinkle with fresh parsley if desired. Serve immediately while hot.
