Spicy Apple Cheddar Grilled Cheese

  • 4 slices of sourdough or thick-cut Italian bread
  • 4 ounces sharp white cheddar cheese, sliced or shredded
  • 1 medium Granny Smith apple, thinly sliced
  • 1 tablespoon pickled jalapeños, chopped (or 1 teaspoon hot honey)
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon Dijon mustard
  • A pinch of red pepper flakes (optional)

Instructions

  1. Lay the four slices of bread on a clean work surface. Spread a thin layer of Dijon mustard on the inside of two slices. On the outside of all four slices, spread the softened butter evenly to ensure a golden, crispy crust.
  2. On the non-buttered side of two slices, place a generous layer of sharp cheddar cheese. Top the cheese with the thin apple slices and the chopped jalapeños or a drizzle of hot honey. Add another layer of cheese over the apples to help “glue” the sandwich together, then top with the remaining bread slices, buttered side facing out.
  3. Place a non-stick skillet or griddle over medium-low heat. It is important not to rush this process; a lower temperature ensures the cheese melts completely before the bread burns.
  4. Place the sandwiches in the skillet. Cook for about 3 to 5 minutes on the first side until deep golden brown. Carefully flip the sandwiches and cook for another 3 to 4 minutes. Press down slightly with a spatula to help the ingredients fuse together.
  5. Remove the sandwiches from the pan and let them rest for one minute. This allows the cheese to set slightly so it doesn’t all run out when you cut it. Slice diagonally and enjoy immediately.
