  • 2 cans (5 oz each) tuna in water, drained
  • 1/3 cup plain non-fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tablespoons minced red onion
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley or dill
  • Salt and black pepper to taste
  • 6 to 8 large Bibb, Butter, or Romaine lettuce leaves

Instructions

  1. Open the cans of tuna and drain the water completely. Place the tuna into a medium-sized mixing bowl and use a fork to flake the pieces apart until there are no large chunks remaining.
  2. Add the Greek yogurt, daily Dijon mustard, and fresh lemon juice to the bowl with the tuna. Stir everything together until the tuna is evenly coated and the mixture reaches a creamy consistency.
  3. Fold in the chopped celery, minced red onion, and fresh herbs. Season the mixture with a pinch of salt and plenty of black pepper. Stir well to ensure the vegetables are distributed evenly throughout the salad.
  4. Wash the lettuce leaves and pat them completely dry with a paper towel. This ensures the wraps stay crisp and do not become soggy once filled.
  5. Spoon a generous amount of the tuna mixture into the center of each lettuce leaf. You can serve them immediately or chill the tuna salad in the refrigerator for 30 minutes to let the flavors meld together.
