  • 2 salmon fillets (6 oz each)
  • 1 cup dry quinoa
  • 2 cups water or vegetable broth
  • 1/2 cup teriyaki sauce (homemade or high-quality store-bought)
  • 2 cups broccoli florets
  • 1 ripe avocado, sliced
  • 1/2 cup shelled edamame
  • 2 tablespoons olive oil
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, thinly sliced
  • 1/2 lemon, cut into wedges

Instructions

  1. Rinse the quinoa thoroughly in a fine-mesh strainer to remove any bitterness. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  2. While the quinoa is cooking, steam the broccoli florets until they are tender-crisp and bright green. This usually takes about 4 to 5 minutes. If you prefer, you can also lightly sauté them in a pan with a splash of water and a pinch of salt.
  3. Pat the salmon fillets dry with a paper towel and season lightly with salt and pepper. Heat olive oil in a large non-stick skillet over medium-high heat. Place the salmon skin-side down (if it has skin) and cook for 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes.
  4. Lower the heat to medium-low and pour the teriyaki sauce over the salmon fillets in the pan. Let the sauce bubble and thicken for 1-2 minutes, spooning it over the fish so it becomes beautifully glazed and sticky. Remove from heat once the salmon is cooked through and flakes easily with a fork.
  5. Divide the cooked quinoa between two bowls. Top each bowl with a glazed salmon fillet, a portion of steamed broccoli, sliced avocado, and edamame. Drizzle any remaining teriyaki sauce from the pan over the bowls.
  6. Sprinkle with sesame seeds and sliced green onions. Serve with a lemon wedge on the side for a bright, citrusy finish.
