Instructions
If your Medjool dates feel a bit firm or dry, soak them in warm water for about 5 to 10 minutes. Drain them thoroughly and pat them dry before using. This ensures they blend into a smooth, sticky paste that holds the bites together.
Place the pitted dates and almond butter into a food processor. Pulse until the mixture forms a thick, uniform paste. You may need to scrape down the sides of the bowl once or twice to make sure everything is fully incorporated.
Add the rolled oats, chia seeds, vanilla extract, and sea salt to the food processor. Pulse a few more times until the oats are broken down slightly and the mixture is well combined. If you are adding chocolate chips or coconut, fold them in by hand at the end to keep their texture intact.
Scoop about one tablespoon of the mixture at a time and roll it between your palms to form a smooth ball. If the mixture is too sticky, lightly dampen your hands with water or a tiny bit of coconut oil. Repeat until all the dough is used.
Place the finished energy bites on a plate or baking sheet lined with parchment paper. Refrigerate them for at least 30 minutes. This helps them firm up and allows the flavors to meld together perfectly.
