  • 2 large firm apples (Honeycrisp, Fuji, or Gala work best)
  • 1.5 teaspoons ground cinnamon
  • 1 tablespoon granulated sugar or coconut sugar (optional)
  • Cooking spray or parchment paper

Instructions

  1. Step 1: Oven Preparation: Preheat your oven to 200°F (95°C). Line two large baking sheets with parchment paper or lightly coat them with non-stick cooking spray to prevent the apples from sticking.
  2. Step 2: Slicing the Apples: Wash and dry your apples thoroughly. Using a mandoline slicer or a very sharp knife, cut the apples into paper-thin rounds. Aim for slices that are about 1/8 inch thick. Remove any seeds from the slices, but you can leave the core for a pretty star shape in the center.
  3. Step 3: Seasoning the Slices: In a small bowl, width the cinnamon and sugar together. Arrange the apple slices in a single layer on the prepared baking sheets, making sure they do not overlap. Lightly sprinkle the cinnamon mixture over the slices.
  4. Step 4: Slow Baking: Place the baking sheets in the oven. Bake for approximately 1 hour, then remove the trays and flip each apple slice over. Sprinkle the other side with any remaining cinnamon sugar. Bake for another 1 to 1.5 hours.
  5. Step 5: Cooling for Crispness: Turn off the oven and let the chips sit inside for an additional 15 minutes as it cools. Remove the trays and let the chips cool completely on a wire rack. They will continue to crisp up as they reach room temperature.
