Take your large platter or wooden board and spoon the hummus into the center. Use the back of a large spoon to spread the hummus outward in a circular motion, creating “swooshes” and shallow wells. These wells are perfect for catching the olive oil and small toppings.
Wash and chop the cherry tomatoes, cucumber, and red onion. Keeping the pieces relatively small and uniform in size makes it easier for guests to scoop them up with their pita bread. If you find red onions too sharp, you can soak the slices in cold water for 10 minutes first.
Begin layering your toppings over the spread hummus. Start with the cucumbers and tomatoes, then add the olives and red onion. Distribute them evenly across the board so that every bite has a bit of everything. Sprinkle the crumbled feta cheese over the entire surface.
Drizzle the extra virgin olive oil into the wells of the hummus. Sprinkle the toasted pine nuts, fresh parsley, and sumac (or paprika) over the top. The spices add a pop of color and a nice depth of flavor to the finished dish.
Arrange your warm pita bread, crackers, or sliced raw vegetables around the edges of the board. This makes it easy for guests to start dipping right away. Serve immediately while the vegetables are crisp and fresh.
