Instructions

  1. Prepare the Breading Stations: Set up three shallow bowls for your dredging station. Place the flour in the first bowl. In the second bowl, whisk together the eggs and milk. In the third bowl, combine the Italian breadcrumbs, garlic powder, and grated Parmesan cheese.
  2. First Coating of the Cheese: Unwrap each cheese stick. Roll a stick in the flour until lightly coated, shaking off any excess. Dip the floured stick into the egg mixture until fully submerged. Finally, roll it in the breadcrumb mixture, pressing gently to ensure the crumbs stick.
  3. Double Coating for Extra Crunch: For the best results, repeat the process. Dip the breaded stick back into the egg mixture and then back into the breadcrumbs. This double coating is essential for preventing the cheese from exploding during the frying process.
  4. Freeze the Sticks: Place the breaded mozzarella sticks on a baking sheet lined with parchment paper. Place the sheet in the freezer for at least 2 hours. This step is mandatory; if the cheese isn’t frozen solid, it will metal before the crust turns golden.
  5. Heat the Oil: Pour about 2 inches of vegetable oil into a heavy-bottomed skillet or saucepan. Heat the oil to 350°F (175°C). Use a thermometer to ensure the temperature is accurate, as oil that is too cold will make the sticks greasy.
  6. Fry Until Golden: Carefully place 3 or 4 frozen sticks into the hot oil. Fry for about 1 to 2 minutes, turning once, until the coating is golden brown. Do not overcrowd the pan, as this will drop the oil temperature too quickly.
  7. Drain and Serve: Use a slotted spoon to remove the sticks from the oil and place them on a paper towel-lined plate to drain. Let them rest for one minute before serving to allow the cheese to set slightly.
