Slice and Separate the Onions: Begin by peeling your onions and slicing them into rounds about 1/4 to 1/2 inch thick. Carefully separate the slices into individual rings. Discard the very small inner bits or save them for another recipe.
Prepare the Dry Coating: In a medium-sized bowl, whisk together the flour, baking powder, salt, and smoked paprika. Take your separated onion rings and toss them in this flour mixture until they are lightly coated. This helps the batter stick better later. Set the coated rings aside on a wire rack.
Mix the Wet Batter: To the remaining flour mixture in the bowl, add the egg and the milk. Whisk until the batter is smooth and free of large lumps. It should have a consistency similar to pancake batter—thick enough to coat a spoon but still pourable.
The Final Coating: If you are using Panko breadcrumbs, place them in a separate shallow dish. Dip each flour-dusted onion ring into the wet batter, let the excess drip off, and then press it into the breadcrumbs until fully covered. If you prefer a smoother batter-style ring, you can skip the breadcrumbs entirely.
Fry Until Golden: Heat your oil in a large deep skillet or pot to 365°F (185°C). Drop the rings into the hot oil in small batches. Fry for 2 to 3 minutes, turning once, until they are deep golden brown. Do not overcrowd the pot, or the oil temperature will drop and the rings will become greasy.
Drain and Season: Use a slotted spoon to remove the rings from the oil. Place them on a paper towel-lined plate or a wire rack to drain. Immediately sprinkle with a little extra salt while they are still hot to ensure it sticks.
