1 cup rolled oats (use certified gluten-free if needed)
1/4 cup pumpkin puree (not pumpkin pie filling)
1/4 cup creamy almond butter or peanut butter
2 tablespoons maple syrup or honey
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/4 cup mini chocolate chips (optional)
A pinch of salt
Instructions
In a medium-sized mixing bowl, stir together the pumpkin puree, almond butter, maple syrup, and vanilla extract. Whisk them until the mixture is smooth and completely combined.
Add the rolled oats, pumpkin pie spice, and a pinch of salt to the bowl. Use a spatula or a sturdy spoon to fold the dry ingredients into the wet mixture until a thick dough forms.
If you are using chocolate chips or other additions, gently fold them into the dough. Ensure they are evenly distributed so every bite has a bit of sweetness.
Place the bowl in the refrigerator for about 15 to 30 minutes. Chilling the dough makes it much easier to handle and prevents it from sticking to your hands during the rolling process.
Scoop about one tablespoon of dough at a time and roll it between your palms to form a ball. Repeat this process until all the dough is used, making approximately 12 balls.
