Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper or silicone mats to prevent sticking and ensure easy cleanup.
Wash and peel the sweet potatoes. Slice them into even matchsticks, about 1/4 inch thick. It is important to keep the size consistent so they all cook at the same rate.
For the best results, soak the cut fries in a bowl of cold water for about 30 minutes. This removes excess starch. After soaking, pat them completely dry with a clean kitchen towel.
Place the dried fries in a large bowl. Dust them with cornstarch and toss to coat lightly. Add the olive oil, salt, pepper, garlic powder, and smoked paprika. Toss everything together until every fry is evenly coated.
Spread the fries in a single layer on the prepared baking sheets. Do not overcrowd the pan, as this causes them to steam instead of crisp. Bake for 20 to 25 minutes, flipping them halfway through, until the edges are browned and crisp.
