  • 8 oz Feta cheese (preferably a block packed in brine)
  • 1/4 cup Full-fat Greek yogurt or cream cheese
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Lemon zest
  • 1 tablespoon Fresh lemon juice
  • 23 tablespoons High-quality honey
  • 1/2 teaspoon Red pepper flakes (optional)
  • 1 tablespoon Fresh thyme leaves or chopped parsley for garnish

Instructions

  1. Step 1: Prepare the Feta
    Drain the feta cheese from its brine. If the cheese is particularly salty, you can give it a quick rinse under cold water. Crumble the block into smaller chunks so it blends more easily in the food processor.
  2. Step 2: Blend the Base
    Place the crumbled feta, Greek yogurt, olive oil, lemon juice, and lemon zest into a food processor. Pulse a few times to break everything down, then blend on high for 1 to 2 minutes until the mixture is completely smooth and airy.
  3. Step 3: Plate and Garnish
    Transfer the whipped mixture to a shallow serving bowl. Use the back of a spoon to create a few “swirls” or wells in the surface of the cheese. This gives the honey a place to pool beautifully.
  4. Step 4: Drizzle and Season
    Generously drizzle the honey over the top of the whipped feta. Sprinkle with fresh thyme leaves and red pepper flakes if you enjoy a little bit of heat with your sweet.
